Lydia del Olmo (Valladolid 1989) considers herself half Galician and half Castilian. Dedicated to top-level sport from an early age, at the age of 23 she decided to change her life and dedicate herself to cooking, following another passion instilled in her by her maternal grandmother: cooking.
Her fighting spirit, non-conformism and restlessness led her to work in various kitchens such as Culler de Pau, Disfrutar, Casa Solla... until she opened her own project on 15 August 2020.
Respectful of the ecosystem and the food available in Galicia, Ceibe's cuisine is made with seasonal products, to be served in a simple way, always respecting their natural flavours and textures, drinking from the tradition and culture of the old Galician recipe book from a contemporary perspective.
