Young blood in Asturias cuisine to demonstrate an eagerness to perpetuate the trade.

He began his cookery studies as a young man, but after the old-school fashion: traditional cooking alongside his family. In his case, at the restaurant in Madrid run by his uncle and mentor, Antonio Cosmen. But loud is the call of the land, and it was not long before Héctor went back to Asturias to set up his own business.

He does this in his native village, Leitariegos, in a restaurant below the ski resort at this small location in Asturias. He works in the kitchen there, and consolidated his skills as runner-up in the 2020 National Best Asturias "Pote" Championship in 2020, and the winner of the championship in 2022. This year he was also runner-up in the National Best "Verdina" Beans Championship.
